Spooky Pumpkin Spice Donuts

These baked donuts are perfect as a snack or for a breakfast on the run.  They are packed with pumpkin and chia seeds for added protein.  A much healthier choice over a fried donut!


  • 1 ½ cups pumpkin purée (canned pumpkin, not pumpkin pie filling)
  • 1 ½ cups sprouted spelt flour
  • 3 eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup grapeseed oil
  • 1/2 cup coconut sugar
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1/4 tsp sea salt or Himalayan salt
  • 2 tbsp chia seeds
  • 1/4 cup pumpkin seeds


  • Preheat the oven to 350°F. Lightly grease 2 donut pans
  • Beat together the oil, eggs, sugar, pumpkin, spices, salt, and baking powder until smooth
  • Add the flour, blend until smooth
  • Add pumpkin and chia seeds, stir until combined
  • Fill the wells of the donut pans, only fill around 3/4 full
  • Bake the donuts for 20 – 25 mins (check with toothpick, should come out dry)
  • Remove from the oven, pop over onto a cooling rack
  • Makes 12 donuts

Optional **  Serve as is or melt 1/2 cup of Enjoy Life chocolate chips in a double broiler and drizzle on top
