Healthy Sweet Potato Eggs Benedict

Eggs Benedict with Sautéed Spinach on a Toasted Slice of Sweet Potato,

Drizzled with Coconut Oil and Turmeric Hollandaise Sauce

Step 1

Sweet Potato Toast

Ingredients:

  • 1 large sweet potato, washed, skin on, cut into 1/4″ slices
  • (for this recipe you will only use 2 slices of sweet potato, save the rest of the potato for another dish)

Directions:

Note: Toasting sweet potato is best done in a toaster oven.  If you don’t have a toaster oven you can use a regular toaster but it will take a few toast cycles before it is ready.

  • Set the toaster oven to 360 degrees
  • Place sweet potato slices in the toaster oven
  • Bake until potato is soft with brown spots (approximately 15-20 mins)

OR

  • Place sweet potato slices in a toaster
  • Toast 3-4 times on high until potato is soft with brown spots
  • Place on a plate and set aside while you prep the rest of this recipe

 

Step 2

Poached Eggs

Ingredients:

  • 2 eggs
  • 2 tbsp white vinegar
  • 1 tsp salt
  • water

Directions:

  • Fill a saucepan with about 3 inches of water. Heat on medium heat until it starts to simmer, do not bring water to a boil
  • Add vinegar and salt
  • Crack individual egg into a small dish separately, and gently place egg, one at a time, into the water
  • Cook in simmering water until white is set and yolk is cooked as desired, approximately 3 to 5 minutes.
  • Remove eggs with a straining spoon
  • Place in a bowl and set aside until you are ready to assemble this dish

 

Step 3

Sautéed Spinach

Ingredients:

  • 1 cup baby spinach, stems removed
  • 1 tsp avocado oil (or coconut oil)

 

Directions:

  • Heat a small skillet with avocado oil on medium to high heat
  • Add spinach and cook while stirring until spinach is wilted (approx 5-10 mins)
  • Place in a bowl and set aside until you are ready to assemble this dish

 

Step 4

Hollandaise Sauce

  • 2 egg yolks
  • 1 tbsp lemon juice
  • 3-4 tbsp coconut oil, melted
  • 1/8 turmeric powder
  • 1/8 teaspoon paprika

You can use a double broiler for mixing this or make your own with a pot and oven safe bowl

  • In a oven safe bowl, whisk egg yolks and lemon juice until thick
  • Place the bowl over a pot with barely simmering water (make sure the bowl does not touch the water line as the eggs will cook with too much heat)
  • Whisk steadily while slowly drizzling the coconut oil (gauge how thick you want the sauce to be, you may only need 3 tbsp of oil before it thickens)
  • (You may need to remove the bowl from the pot, whisk and return the bowl over the water a few times to get the right consistency and to prevent scrambling the yolks)
  • Remove from heat and whisk in turmeric and paprika

 

Step 5

  • Preparing your Eggs Benedict Platter
  • On a plate, layer sweet potato, spinach, poached egg, then drizzle hollandaise sauce over eggs.
  • Garnish with fresh rosemary or parsley

 

For a complete meal: serve with sliced avocado and fresh fruit
